I don’t always have a sweet tooth, but when I do – I don’t want to waste my calories on it.
I discovered this recipe by fluke and scoffed at the idea. When I think of cake, I think of eggs, milk, butter, OIL, not boxed cake and diet soda.
But, I was pleasantly surprised when I had these. They are really moist and you can experiment with them in so many different ways! You can put bananas, frozen blueberries, or apple slices in them. The world is literally your oyster because they are so low cal.

Low Calorie Cupcakes
These Low Calorie Cupcakes are delicious, moist and only 70 calories!
Equipment
- Cupcake pan
- Cupcake liners
- Whisk
Ingredients
- 1 Can Diet Soda You can chose any flavour
- 1 Box Cake Mix You can chose any flavour for this too!
- 1/2 Cup Plain Yogurt Optional but adds moisture
Instructions
- Preheat oven to 325° farenheit
- Combine all ingredients and mix until smooth
- Spray the cupcake pan with pam and place cupcake liners
- Evenly fill each cupcake liner with mixture
- Bake for 12 minutes or until toothpick comes out dry
- Let cool for 5 minutes.
Notes
- Yogurt is optional, but it adds great moisture to the cake. You can not use anything at all or substitute it with sour cream, apple sauce and even a few laughing cow cheese slices!
- I love using Betty Crocker super moist cakes.
- If you can’t eat through 24 cupcakes, just half the recipe, and save the boxed dry cake for later.
- Experiment! Try diet ginger ale with carrot cake mix or diet vanilla coke with french vanilla cake mix!
- Sprinkle with cinnamon when cool.
